Antipasto Kabobs

Artichoke Kabobs brought to the 2009 Lighting Party by Dave and Shirley Krause

Ingredients:
1 (9 ounce) cheese-filled tortellini, refrigerated and uncooked

1 (14 ounce) can artichoke hearts, drained and halved

1 (6 ounce) can pitted ripe olives, drained

1/2 (8 ounce) package sliced pepperoni

1 (8 ounce) bottle Italian dressing

Directions:
Cook tortellini according to package directions; drain.
Combine tortellini and remaining ingredients in a large bowl.
Toss gently, cover and chill mixture at least 1 hour.
Thread tortellini, artichoke hearts, olives, and pepperoni
onto each of 24 (6 inch) wooden skewers.
Discard marinade.
To serve, arrange kabobs on a serving platter.

To prepare in advance: Skewer the ingredients and
marinate in the dressing overnight.
