Pomegranate Salad

Pomegranate Salad with pomegranate seeds, celery, apple and whipped cream

Ingredients:
Equal amounts of the following 3 produce:
* 3 - Pomegranates
* Celery (4-5 ribs, chopped)
* 2 - Red Delicious Apples

Whipped cream or pre-whipped topping i.e. CoolWhip (do not use pressurized canned whipping cream)
* Heavy whipping cream (aprox. one cup)
* Powdered sugar
* Vanilla

Your choice of amounts of sugar and vanilla
Whip the cream until it is very stiff (It will break down a little when mixed with fruit)

Directions:
To remove pomegranate seeds (pomegranates will permanently stain clothing or tile grout), this will be done completely under water. Fill a dish pan, large bowl or large cooking pot with cool to Luke warm water, deep enough to submerge the pomegranate and your hands. You may want to wear a pair of rubber gloves because your hands will be in the water quite a while. Hold the pomegranate under the water and run a knife around it (cutting through the leathery skin); it is OK if you cut into the seeds a bit. Turn the pomegranate and cut around it again. To open twist the two halves then pull apart at the other cut line. Now with your thumbs, start dislodging the seeds, being careful not to pop them. The seeds will sink to the bottom and the skin and white membrane will float to the top of the water. When you have all the seeds out, discard the skin and the white membrane. Dump the water and seeds through a colander. Grab a handful of seeds and sort out the bad ones and any of the white membrane. You only want the very clear and pretty seeds. This procedure can be done a day or two before you want the salad. Store them in a covered bowl, just the seeds - no water. BE VERY CAREFUL, if the family finds out that there are pomegranates in the refrigerator that have been all prepared, you may not have any left for a salad!
Wash celery and apples (leave the skin on the apples). Cut the apples last, if cutting the apples an hour or two before assembling the salad put them into a dish of cold water and add lemon juice. Drain well before mixing with the whipped cream (Place on paper towel to remove moisture). Fold whipped cream into the seeds, apples and celery. Start with a small amount of whipped cream (the amount used is personal choice).

Cook's Notes:
NOTE: Cut the celery and apples into small pieces (You do not want them too much larger or smaller than the pomegranate seeds).
EQUAL Parts – i.e. If you use 1 cup of seeds then use 1 cup of apples and 1 cup of celery.

Shopping: For a salad for 4 people, I will buy 3 pomegranates and 2 apples, 4-5 ribs of celery and one pint of heavy whipping cream. I have tried other varieties of sweet apples but, have found that the best choice is red delicious.
