Cousin Jean's Sweet Potato Delight

Sweet potatoes with banana, brown sugar and pecans

Ingredients:
3 cups cooked mashed sweet potatoes and yams
1 mashed banana
1/4 cup granulated sugar
1/4 cup brown sugar
2 eggs, well beaten
1 teaspoon vanilla
1/4 cup orange juice
1/2 cup butter
TOPPING
1 cup packed brown sugar
1/3 cup flour
1 cup chopped pecans plus some whole ones
1/3 cup butter
Directions:
Mix all ingredients together, except topping, and pour into a buttered casserole. Mix topping ingredients together and sprinkle over casserole. Bake at 350 degrees for 30 minutes.
Cook's Notes:
I mix the eggs, vanilla, orange juice and banana in a blender before adding it to the sweet potatoes/yams and butter. I also double the recipe but use a deeper dish with less surface area and don't double the topping ingredients.
