Scalloped potatoes with blue cheese and mushrooms

Ingredients:
5 Russet potatoes
5 Yukon Gold potatoes
2 cans cream of mushroom soup
1 & 1/2 cans milk
1 Onion
butter
salt & pepper
crumbled blue cheese - 1 1/2 small cartons
parmesan cheese
dash of cayenne pepper
a big handful of mixed mushrooms ( I use the Gourmet Mushrooms Blend from Costco - dried Porcini, Morels, Brazilian, Irory Portabellas, Shiitake, & Oyster)
Directions:
Soak the mushrooms in hot water and then add the soup and milk mixture then add 1 carton of the blue cheese and enough cayenne pepper to taste. Butter a big baking dish. I slice onion and potatoes in a Cousinart. Make a layer of potatoes, salt and pepper layer and then add a thin scattering of onion. Dot with butter. Layer with 1/3 of the soup mixture. Do the same for two more layers.
I then sprinkle 1/2 carton of the blue cheese and parmesan cheese on the top. Cover and bake at 375 degrees for 45 minutes. Uncover and bake for 15 minutes longer, until potatoes are tender and golden brown.
